This is a question that is asked in every home. It’s been a long day and the weekend is here but you don’t feel like spending a lot of time in the kitchen tonight. You need a quick go to.
See what you have left from the week and try to pair it together. That might mean those veggies and meat are now a top of some rice or noodles. Maybe you have left over lunch meat from sandwiches but you are tired of cold cut sandwiches. With that I say add very little meat or cheese to the bread and place it in hot pan for a hot sandwich and then pair that with some soup or cut the sandwiches up and make it snack night with crackers, or veggies. There are so many ways to throw together a meal from leftovers, the trick is to set it all out and start pairing.
Tonight for us I will do just that. I know we have left over deli sliced chicken, an open package of cream cheese, jalapenos’ and spinach. We do have crackers in the cabinet and probably a roll or two left. I have a couple different ways I can make something out of this. 2 rolls aren’t enough for mini sandwiches unless I want to pile them really high. Why not toast the rolls and add some butter to them and press some garlic and spread it on there. There are two of us so we’ll each get a roll or if there is only one roll each will get half a roll. From there I will split open the jalapenos’ and line the sides with the deli meat and fill it up with cream cheese and put that all in the oven to bake until the jalapenos are cooked. Once done I will put some spinach on the plate and drizzle it very lightly with an oil or dressing, place the jalapenos on top of that and put the roll on the side. That is just one idea. You could always cut up the jalapenos and place the spinach, jalapenos in a lightly oiled pan on the stove, then cut up the deli meat and add it, let that all cook and get hot. Now add the cream cheese to it and mix it well but don’t let the cream cheese get fully melted you want it mixed in well but not bubbly hot. At this time I would toast the rolls and then add the mixture to the roll. It would be similar to a salad sandwich but instead is a cream cheese sandwich.
Now assuming you have other groceries in the house you can step it up a notch. Take option 2 above but before you add the cream cheese add a few eggs and then you can melt the cream cheese on top of it all. You could eat this has a meal with a roll on the side or put it on the roll for a sandwich. Eggs are filling so this is a good trick if you don’t have a lot of ingredients but want the dish to fill up your hungry bunch.

This is a short post to jump start your end of day Friday. My advice for tonight’s meal, forget the cook book lay out on the counter what you have and make it up as you go. Those can sometimes be the best meals!

In today’s world we are conditioned to follow latest fads and stay connected always. Is this healthy? You decide by changing things up this weekend and maybe for the next few weekends and see if you feel any different. The weekend is here and it is beautiful outside, in most areas anyway, so why not leave the ‘stuff’ behind and reconnect with yourself.
For me this is hiking, walking our dogs and just enjoying the sounds of nature. How do you turn off that annoying voice in your head that runs through the stresses in your life though? It is different for everyone and has taken me years to figure out but for me it is by dismissing them. I have started putting my phone up while I am enjoying me time, I use to listen to music but even that is distracting at times. Anytime my mind starts to wonder I force my thoughts on to the scenery around me. I walk in the country so that means I am checking out the trees, watching the leaves blow and seeing how many different noises from the birds and frogs I can hear. By keeping your mind busy on this type of stuff gives it a break from your stresses. This will also start conditioning your mind to be able to turn off those stresses when you are in this relaxing environment. Maybe you are a city dweller with no country side available to walk thru, make the best of what you have. Walk around the blocks and take in the city noises in a way you have never done before. How many different cars drove by, how many kids on bikes, try to pick out over all the hustle of everyone and see if you can hear any birds. My point is no matter where you live and what you have available to you there is another dimension around you that you don’t usually notice. Take time to notice that other dimension because it just might spark some clarity that you need and don’t even realize you need.
I challenge you to get out and about and do something you don’t normally do or haven’t done in a long time. Enjoy life how you want not how everyone else wants you to!
A few years ago I stumbled across the Netflix movie ‘Fat, Sick, and Nearly Dead’. I am a documentary junkie so I watched it. It made me want to start juicing. So I went to Wal-Mart and I bought a $50 GE brand juicer and got to it. It has done well for me over the last few years but it is so cumbersome to use and clean! Cleaning it is a pain, the strainer never really gets clean plus it has a crazy sharp blade. Now, I don’t have a dishwasher so maybe if I could throw it in the dishwasher it would be easier. For me though, I hand wash my dishes so easy clean up is important to me. I got out of juicing for a while because of those reasons I mentioned. I miss it! So, I started researching reviews online to see if I was missing out. I was missing out for sure!
Juicing for me is refreshing. Fruits and Vegetables are a big part of what your body needs to stay healthy. They can keep cholesterol down, blood pressure in check, keep cancer cells from forming, keep headaches at bay and I could go on and on. So instead of chasing the latest fad or taking oodles of medicines each day juicing can replace those things and be a life style change. Why not put it as part of your daily routine? Juicing also is a great jump start to the day! I have more energy and feel great first thing in the morning. When people grumble because they think I am a bubbly morning person I just say back to them it’s all in how you start your day. My husband loves it when I hand him a fresh made glass of juice. When I stopped juicing everyday he one day said to me that he was slowly losing his morning energy and couldn’t figure out why. He said his days just weren’t up to snuff. I realized not juicing was affecting our energy levels, moods and basically our overall day.
The internet can be a blessing from time to time, online reviews and you tube videos of products can go a long way with making a decision on what to purchase. I started reading the differences between my old juicer which is a centrifugal juicer and the new juicer which is a masticating juicer. Centrifugal juicers have blades and masticating juicers have augers. The masticating juicers squeeze out more juice leaving a dryer pulp therefore getting more juice for your money. That alone sold me on the masticating juicer. It is much pricier though so I wanted to know more before I spent that kind of money.
Continuing my research I found that the Omega 8004 juicer will not only make a nice refreshing juice but it will make nut butters and extrude pasta. How cool is that! Peanut Butter is a great source of protein and a good snack and who doesn’t like the occasional Pb&J. I buy lots of Peanut Butter and only the real peanut butter that has nothing added to it. I get mine at Natural Grocers because they make it right there. Now I can make my own! I did this past weekend, it rocks! I don’t have a pasta machine, I do make fresh pasta but I usually roll it out and cut it so it isn’t the best shaped pasta. This little machine has different ends so I will now have some nice homemade spaghetti. It listed other things you can do but I hit the highlights with what makes it a great machine.
Clean up is a breeze with it. Since it is an auger and not a blade you can get into those tight areas easier plus the mesh screen is small and cleans up quick with a brush that came with it.
Juicing has once again become a part of my daily routine and I already feel better and have more energy. My advice is no matter how much you can afford get a juicer and get to juicing! Don’t forget juicing is fruits and veggies so you get a lot of nutrition out of it.
